Italy is known for its incredible ancient architecture, groovy music, balmy weather, and its delicious food. What if we tell you that you can taste the flavors of Italy’s Sardinia without leaving the comfort of your city? That’s right! Situated in the middle of the Mediterranean Sea, Sardinia is the second-largest island in the Mediterranean after Sicily. Sardinian food is simple, fresh, and appetizing as it uses a lot of organic ingredients. The Italian food maestro, Chef Marco brings some of the most authentic dishes from the countryside of Italy for you right at Prego, Westin in Gurgaon.

Some signature delicacies at Prego include a selection of Cappellacci ai funghi selvatici, Carpaccio alla veneziana, Filetto alla Romana, Panna cotta al caramello e mandorle, Salmone Norvegese alla piastra, Tiramisu, Zuppa di pesce alla Sarda, and zuppa di zucca e calamari.

This little gem has a rustic ambiance that’ll make you feel and experience the charm of the Italian countryside.

    Dishes To Die For

    2. Cappellacci ai funghi selvatici

Think of this cheese-filled pasta (whose name translates as “little hats”) as inside-out tortellini. These cappelletti are served in a simple sauté of wild mushrooms, deglazed with white wine.

    3. Zuppa di pesce alla Sarda

Packed with glorious Mediterranean red mullet, scorpionfish, clams, mussels and prawns, this seafood broth takes an effort and expertise to prepare but has an unparalleled flavor.

    4. Carpaccio alla Veneziana

Carpaccio is one of the most famous Italian antipasti but the version most people are familiar with is thin beef slices macerated in olive oil and lemon, adorned with arugula and shavings of Parmesan cheese.

    5. Salmone Norvegese alla piastra

The Grilled Norwegian salmon served with a base of green pea soup is super-delicious, irresistible and an absolute visual highlight. Paired with fresh asparagus and chef’s favorite veggies – this dish is a weight watcher’s best friend.

    6. Filetto alla Romana

Art on a plate – Buffalo Tenderloin served with mashed potatoes and Chef’Special winter veggies.

A Little About The Amiable Chef Marco

Chef Marco grew up on a 250-acre farm eating farm-to-table meals with his large family and that helped shape his opinion on food. It helped him learn to value the importance of natural products in the habitat and to use what you have near.

He says, “My childhood memories are gorgeously illustrated, with pictures of my father, cousins, and aunts picking grapes and green and red tomatoes and canning them, taking turnips out of the soil, selecting perfect steaks of beef. We drank milk from our own cows and goats, livestock was readily available and of course, all the fruits and vegetables were organically grown. As the youngest, I was very spoilt by my mum and I would be allowed to help her cook in the kitchen”.

“We enjoyed making things like our pasta from scratch. Spending time around the dinner table with fresh food has always been a part of my life, and all my dishes are inspired by the warmth of my family and the simple joys of sharing hearty and rustic home food.”

Chef Marco’s approach to Italian cuisine is simple and classical; he uses fresh, seasonal organic ingredients purveyed by local farmers and butchers. It is with this foundation that he is able to transmit Mediterranean history and Sardinian cultural richness into his inspired dishes. Being brought up on a farm, Marco said, has meant that he’s better in touch with the seasons, and therefore that has contributed to make him a better chef.
