A Little About The Amiable Chef Marco

Chef Marco grew up on a 250-acre farm eating farm-to-table meals with his large family and that helped shape his opinion on food. It helped him learn to value the importance of natural products in the habitat and to use what you have near.
He says, “My childhood memories are gorgeously illustrated, with pictures of my father, cousins, and aunts picking grapes and green and red tomatoes and canning them, taking turnips out of the soil, selecting perfect steaks of beef. We drank milk from our own cows and goats, livestock was readily available and of course, all the fruits and vegetables were organically grown. As the youngest, I was very spoilt by my mum and I would be allowed to help her cook in the kitchen”.
“We enjoyed making things like our pasta from scratch. Spending time around the dinner table with fresh food has always been a part of my life, and all my dishes are inspired by the warmth of my family and the simple joys of sharing hearty and rustic home food.”
Chef Marco’s approach to Italian cuisine is simple and classical; he uses fresh, seasonal organic ingredients purveyed by local farmers and butchers. It is with this foundation that he is able to transmit Mediterranean history and Sardinian cultural richness into his inspired dishes. Being brought up on a farm, Marco said, has meant that he’s better in touch with the seasons, and therefore that has contributed to make him a better chef.
